One witness to the text of the Hebrew Bible at a fairly early stage is the Peshitta, the standard Bible of some Aramaic-speaking churches. I cannot tell you much about how important the Peshitta is to textual criticism, other than the fact that it is sometimes cited, but is not generally treated as being as important as the Masoretic Text, the Pentateuch, and Septuagint.
